FLAX GRANOLA BARS

  • 2 cups quick cooking rolled oats
  • ¼ cup spelt flour
  • 1 ¾ cup dried cranberries
  • ½ cup chopped almonds
  • 1/8 teaspoon sea salt
  • ¼ cup extra virgin olive oil
  • ¾ cup brown rice syrup
  • ¼ cup ground flax seeds mixed
    with ¼ cup water to form a paste.

Preheat oven to 350 degrees. In a bowl mix oats, flour, cranberries, almonds, and salt. Add the rest of the ingredients, stir until just combined. Line an 11” x 7.5” baking pan with parchment paper (or an alternate sized pan, although baking time will vary), then grease with oil. Using wet hands, press mixture into pan. Bake 25 minutes or until edges turn golden brown. Let rest for 20 minutes before cutting.
